I am surprised to admit that during the break I took after my 7 day challenge, I actually missed cooking. What has happened to me? Am I actually growing up? Am I becoming domesticated?
When asked if I want to go out to eat I actually find myself wanting to stay in and cook something. And you normally you wouldn’t find me reading the magazines Women’s Day or Good Housekeeping but I find myself picking them up to find new recipes to try.
With left over shrimp and couscous from previous cooking expeditions I found this recipe from Good Housekeeping just what I needed. I get to try something new and use what I already had in the kitchen. Nothing goes to waste :)

The shrimp and mango were brushed with a yogurt mixture that contained curry powder and mint leaves. I have never seen or heard of this combination before and I must say I was very excited about the way it turned out.

Despite the fact that I was grilling at night and with only one porch light everything came out well.

My initial excitement about the yogurt mixture turned out to be justified. The yogurt mixture on the mango pieces were my favorite part. I will be eating the extra mango pieces topped with the yogurt for a nice snack later on. I am not a fan of shrimp but I will admit that the yogurt mixture worked really well with it. I was able to eat two pieces of shrimp…a personal best.
